Parmentier proposed the use of sugar from grapes to sweeten coffee tea and chocolate and the work contains many recipes. The Nouvel aperçu followed the Aperçu des résultats... dans le cours des années 1810 et 1811 which was published in 1812. The Art de faire les eaux-de-vie was first published in 1801.
