The climatic conditions for ageing the wine inside the bottle has been perfect. Many of the bottles have been stored for the 5-15 years and some for 15-30 years Having selected one bottle of Champagne at Random (Moet et Chandon. Circa 1990). I can confirm that the condition is outstanding.  I have always been a huge advocate of mature NV Champagne if stored properly. Obviously with a mixed selection, bottles will vary, but here is the note for the bottle of Moet we tried.   A vibrant shimmering light gold colour amplified by a fine white mousse. The bubbles are soft but persevere to create a beautiful wine - perfectly mature, brioche & a gentle caramel, with a easy going acidity holding it all together like a fine white wine, but with the sparkle of champagne. Not a hint of any oxidation. The fruit starting to hold court over the acidity. A wonderful opportunity to buy NV Champagne with added complexity. On its own or with food, this is the sort of Champagne that gets you talking about it , rather than just something to drink while talking about something else Tasted April 2022
