The recipe quoted here is radically different from today in that in the early eighteenth century Stilton was a hard cream cheese pressed and boiled in whey. There is no suggestion that the cheese would have had blue veins but there is no doubt that it would have been a superior product as the recipe quoted here calls for "new milk" and "sweet cream" whereas most other cheeses of the day were made with partially skimmed milk. Lady Mary Wentworth`s recipe also recommends that Stilton should be kept "as much from flys and sun as you can but not to damp they are to be made in May and not used under a year old but they are better att a year and a half old."
