A Manuscript receipt book - Gabriel 'Chummy' Tschumi (1883-1957), Master Chef to Queen Victoria, King Edward VII & King George V. A circa late Nineteenth Century half calf album containing 178 pages of manuscript cookery receipts, the verso of front end paper signed and inscribed "recipes from my service with the Royal Family by Gabriel Tschumi", the recipes divided into categories of dish with m/s tabs at head of pages for soup; fish; meat; savouries; sauces; sweets; etc, the manuscript receipts probably spanning the first half of the 20th century, pages m/s numbered from 263-441, p290 with manuscript heading "Recipes from my service with the Royal Family by Gabriel Tschumi" & many manuscript receipts on the following 24 pages by Tschumi and categorically in his hand, including those for, Balmoral Shortbread; Bavarois au Chocolat; Windsor Castle Carrot Pudding; King Edward VII Yorkshire Pudding; "Queen Alexandra's Favourite Dish - Poulet d'Avoise"; "Recipes from my service with King George V...Curry Sauce and Bombay Duck"; "Buckingham Palace Mutton Pies"; Invalid dishes prepared for King George V when...convalescing at Bognor in 1929 - Pomme de Terre d'Avoise" etc etc, numerous other m/s receipts throughout the book spanning a broad timespan, of which many others probably in Tschumi's hand. Tschumi was a Swiss national who was appointed a cook's apprentice in the kitchens of the Royal Household at 16, and went on to serve as master chef to QV, KE VII & KG V following several successive promotions. He received his long and faithful service medal in 1930 and retired from Royal Service in 1932. He worked at Buckingham Palace, Balmoral, worked on Edward VII's 1902 Coronation banquet & was responsible for the Wedding breakfast for the Duke and Duchess of York April 26 1923. After retirement from Royal Service he worked at Welbeck Abbey, Sandringham and Marlborough at various points. The album 8vo, attractive contemporary half leather with decorative gilt tooling over marbled cloth covered boards, backstrip scuffed at edges, extremities slightly worn, internally some spotting and toning but generally clean/VGC
