All chefs were personal connections of Kay and Paul Henderson (who were/are both American chefs and hoteliers; Kay died 2015). All have inscriptions to Paul Henderson with some including his wife Kay as well. Many reference reciprocal visits to each other's restaurants. Paul and Kay Henderson came to the UK to work in London and then bought and ran Gidleigh Park Hotel from 1978 to 2005. Kay was the chef and self taught. She gained a Michelin star in 1981. In 1994 they employed Michael Caines just before he had his accident losing an arm. They helped him continue working and to achieve 2 Michelin stars.
