It is controlled by the government by an 'appellation' controlled type system. Baijiu is a generic term for spirit and can be made anywhere in China, but Moutai can only be made in Moutai,in Guizhou Province. From the largest producer is the government controlled Kweichou Moutai Factory. From the largest privately owned and most respected Moutai factory is Guizhou Maotaizhen Guowei Liquor Group. It has been made for centuries, and with different ages, typically 3 Year Old and 5 Year Old, with super premium varieties up to 30 Years Old. It is distilled from a “beer” made from malted Sorghum, a gluten-free edible cereal grain known as Jowar in India. Characterized by its distinct flavour and mellow yet pleasant after-taste.
