With an early recipe for Stilton cheese: "Stillton Cheese Lady Mary Wentworth." The recipe quoted here is radically different from today in that in the early eighteenth century Stilton was a hard cream cheese pressed and boiled in whey. There is no suggestion that the cheese would have had blue veins but there is no doubt that it would have been a superior product as the recipe quoted here calls for "new milk" and "sweet cream" whereas most other cheeses of the day were made with partially skimmed milk. Lady Mary Wentworth`s recipe also recommends that Stilton should be kept "as much from flys and sun as you can but not to damp they are to be made in May and not used under a year old but they are better att a year and a half old." Provenance: Inscription on front pastedown "This Book originally belonged to Mrs Moseley daughter to Sir Archer Croft & Mother to Grandmother Smith... S Ball... (some words crossed out) 1797." The provenance is slight awry Elizabeth daughter of Sir Herbert Croft of Croft Castle 1Bt. and sister of Sir Archer Croft 2 Bt. married Acton Moseley of Maer Staffordshire in 1712. The Croft family of Croft Castle were first recorded living in Herefordshire since the Norman Conquest and remained until Sir Archer Croft 3 Bt. sold the castle to Richard Knight " the son of a Shropshire mine owner in 1746.
